Caramelized onions

Caramelized Onins
2 LG Onions, thinly sliced
4 T Extra Virgin Olive Oil
¼ C Light Brown Sugar

To caramelize the onions start by sauteing onions in olive oil over medium heat until soft, being careful not to let them brown, about 10 minutes.  Turn heat to low and cover and let onions sweat, stirring several times, until lightly browned and very soft.  About 20-30 minutes.  Add brown sugar and toss onions thoroughly to coat.  Season with salt and pepper.  For a richer taste, finish with 1T of butter.
